Cao Lau is one of Hoi An's specialty dishes that almost every tourist knows. Cao Lau appeared in the 17th century, when Lord Nguyen decided to open trade at Hoi An port, many Japanese and Chinese people came to this land to trade and live. Since then, Hoi An Cao Lau also appeared as a typical culinary feature of this locality.

The most distinctive feature is the meticulously processed Cao Lau yarn, made from pure rice from Quang Nam. The rice soaking water is taken from Cu Lao Cham. The water used to knead the dough is water from the ancient Ba Le well mixed with ash, to get the flexibility and strength of Cao Lau fibers. Quang Nam people also have their own recipes for kneading dough to ensure it is crispy, flexible and not dry. The dough is usually rolled thinly, then steamed, then sliced into strips.

Beside meat Cao Lau, Sanouva also has veggie Cao Lau. Fresh Cao Lau fibers are combined with other vegan ingredients such as tofu, mushrooms and vegetarian rolls. All are carefully selected, marinated with spices and simmered over low heat to bring an unforgettable experience to diners.

Cao Lau noodles are light brown, crispy and chewy, different from the saffron yellow color of Quang noodles.
